Peppermint is a perennial herb with bushy green leaves and white flowers that grows easily in a cool climate. The Romans used it to treat digestive problems and the Egyptians used it before then. The entire plant has a very characteristic odor, due to the volatile oil present in all its parts, which when applied to the tongue has a hot, aromatic taste at first, and afterwards produces a sensation of cold in the mouth caused by the menthol it contains.
Peppermint was cultivated commercially in the United States before the Civil War. Peppermint oil is harvested while the flowers are in bloom and the flowers, leaves and stems are used. The oil is extracted by steam distillation and has a fresh, strong minty smell. It is used extensively today in confectionery because of its fresh minty taste leaving the mouth tingling all over.
