In 1540, the same Spanish explorers that were credited for extinction of the Inca Empire heard false rumors about gold and cinnamon trees in Brazil. They gathered about 2000 Spaniards and entered the Peruvian and Brazilian jungles, where most of them perished but they did discover the lovely annatto trees growing along the Amazon river. Today, South America; Brazil is still the main producer and exporter but annatto is also grown in the Philippines (introduced by the Spanish).
Annatto is a natural plant extract used in tropical cultures for generations. The annatto tree grows 20 or 30 feet in height with lovely seeded flowers and when its seeds are stirred in water, they produce the orange annatto color, also called achiote, used to color foods such as cheese, butter, and mustard. Many cultures use achiote oils and pastes, with their mild flavor and intense color, on many foods.
